Tried a new recipe tonight for dinner. Tried out a Jamie Oliver chicken recipe: Roasted Chicken Breast with Pancetta Leeks and Thyme. It was pretty good but of course I made a few changes for personal preference and ingredients I happened to have. I used prosciutto instead of pancetta and I used onions instead of leeks (I am not a leek fan). I also used dried thyme instead of fresh. So I guess we really had Roasted Chicken with Prosciutto Onions and Thyme :) We had baked sweet potatoes with butter and garlic salt as a side.
