Made a huge batch of pasta sauce tonight and had it with rice ribbon noodles. A great meal and lots of sauce left to freeze for later meals :)
No real recipe here; just throw in lots of veggies that you like and have on hand. I added red onion, bell peppers, zucchini, spinach, and tomatoes. Cook the veggies with some olive oil and garlic and add some pasta sauce. Done :) Serve on pasta or noodles!
