Tonight's dinner was a salad. I am the first to admit I am not a big salad person. I really don't find them filling so I have to make sure I have lots of healthy fats and proteins in them. It was very nice to have a quick and easy meal though with very little clean-up and little cooking. I marinated my shrimp in a little basil olive oil from O'Leva, garlic powder (was all out of fresh), lemon juice and crushed red pepper. I simply fried them in olive oil for the salad. The salad was a mix of arugula and spinach. I added red pepper, mini tomatoes, yellow apple, pecans, avocado and topped it with the shrimp. For dressing I used basil olive oil and pomegranate balsamic vinegar; both from O'Leva.
