Day 1 has went fantastic so far. I have been feeling a little better the last couple of days as I have already been trying to eliminate some problematic foods since I felt so bad recently. Friday I was almost in tears I felt so bad. I made a meal plan over the weekend and made sure to include foods that I liked and was looking forward to as well as followed the guidelines for this plan.
My day:
I started with a glass of orange juice (mixed with water). I've been mixing for ages now and like it better that way. I also have a little head cold (preschool cooties lol) so I'm trying to drink more orange juice. I usually have a coffee in the morning but without dairy or soy creamer I don't see the point.
Breakfast: Meat & Veggies. It is hard for me to come up with breakfast options when I am not eating gluten, dairy, eggs, or soy; and I want something good and quick. The meat and veggies are filling and I enjoy them. I usually have an egg on top but am eliminating them for now. I used ground pork and added lots of local zucchini, carrot and onion. A little salt and pepper and that's it. I made it the night before and have enough for four or five meals.
Supper: Almond-Flax Crusted Chicken with Roasted Veggies & Corn.
I am finding I'm not a huge fan of chicken breast anymore. I usually find it too dry and bland. I will admit this is a nice, different way to do chicken. I cooked double the chicken to use in salad tomorrow evening for supper. The roasted veg tonight was red potato, carrot, turnip, and broccoli. All the veggies were local :)
Feeling pretty proud of myself today. I usually slip up somewhere and figure a little of this or that won't hurt but not today. I'm also not feeling the best due to a little head cold and Hubby suggested not cooking tonight, but I actually wanted to :) I may finally have reached a point where I've had enough of feeling this badly.
