Breakfast: Leftover Sweet Potato Skillet from yesterday.
Lunch: Creole Jambalaya (meal from the freezer). This one just had the shrimp and chicken, no sausage.
Snack: Larabar.
Supper: Fish Cakes, kind of :) I make the fish cake stuff but then don't actually fry it into fish cakes, so it's more of a Fish Cake Mess I guess. If you want to get really fancy you could call it Deconstructed Fish Cake, lol :)
This is such a simple meal but one of my favorite ways to eat cod. I used a little chicken stock for mashing the potatoes so I didn't have to use butter, as dairy is one of the elimination foods for now. It was still good.
